Chef Einat Admony of New York’s Balaboosta and Taïm will be in town for a pop-up dinner June 29 at Mama Ricotta’s.
Admony consulted on Frank Scibelli’s newest entry, Yafo Kitchen, and “we hit it off,” he says. “She’s really sort of a character.” She’ll work with chefs from Scibelli operations – Paul Cruz (Midwood Smokehouse Ballantyne), Shai Fargian (of Yafo), and Tom Dyrness (Mama Ricotta’s) – to offer family-style appetizers, choice of entree and some desserts in a three-course, prix fixe dinner that’s $50 per person. Optional wine pairings will be offered.
Expect upscale versions of the dishes she serves in her restaurants, such as fried Manzanilla olives with housemade labneh, lamb two ways, ramp pasta with ricotta and “Halva Crème Brûlée with Persian Cotton Candy” (I’m in). Admony, a native of Tel Aviv, became known for falafel place Taïm, while later addition Balaboosta is more Mediterranean in style. Her most recent effort, Bar Bolonat, serves modern Israeli cuisine.
She wants to try barbecue while she’s in town, says Scibelli, but the rest of her visit (besides going through Yafo and discussing growth opportunities, a la the Bad Daddy’s work Scibelli did) is up in the air. Maybe Price’s, he says.
